Lemongrass Miso Noodle Soup with Five Spice Tofu
This Lemongrass Miso Noodle Soup with Five Spice Tofu is everything you’ll love in a bowl —chewy wheat noodles in an aromatic soup base is packed with flavors from charred onion, ginger, and lemongrass. Then there’s the miso paste that’s packed with umami. The five spice tofu is flavorful and adds a nice layer of texture and flavor to the overall noodle soup. Enjoy this with some stir-fried mushrooms, blanched vegetables, chili oil, green onions, and sesame seeds to complete the dish and have an incredibly comforting dish perfect for the cold winter months.

A creamy, comforting, and super satisfying recipe: Baked Scalloped Potatoes in a Creamy Lemon Dill Sauce! It’s of course vegan and dairy-free. I love lemon-flavoured stuff so I just really had to incorporate its zesty flavour and also used some fresh dill from my garden.

This Vegan Sopas is my take on a Filipino Style Macaroni Soup. My mom would always make a big comforting batch of Sopas for all of us to share and what I really loved about it was the silky broth, crunch and sweetness from the cabbage, and the slices of hotdog or sausages. This vegan version uses plant-based sausages and diced ham instead of the chicken. I also added some carrot and bell pepper along with the cabbage for this Sopas.

Chinese corn soup was a staple at home growing up. It’s very simple but so comforting, and very perfect for those cold days. The soup is similar to Chinese egg drop soup but corn soup features, well of course, corn, which I personally prefer because of the extra sweetness and bite. This vegan version uses silken tofu instead of eggs to recreate the silky texture to go with the sweet corn kernels.

Miso Mushroom Orzo Soup
Enjoy a comforting bowl of this Miso Mushroom Orzo Soup for lunch, dinner or any time of the day. This pairs well with some crusty bread as well. Fresh mushrooms are cooked down with onions and garlic in vegan butter before being blended until smooth. Set aside some mushrooms to blitz into smaller chunks for extra texture paired with the orzo. The miso paste adds so much flavor and extra umami to this soup, that’s great made in big batches.

Stir-fries with tomatoes and eggs were a staple at home growing up. Not only were they incredibly easy to prepare but also very cheap and affordable. This Chinese Tomato and ‘Egg’ Stir-Fry is my vegan take on the classic— but instead of using eggs, I use beancurd rolls or sheets to mimic the texture and also add protein into the mix.This recipe is easy, delicious, and very tasty. The acidity from the tomatoes seasoned with soy sauce, sugar, and pepper is perfectly absorbed by the bean curd rolls creating an incredibly tasty dish, that’s perfect with rice.

One-Pot Tomato Miso Gochujang Orzo (Risoni)
This one-pot Tomato Miso Gochujang Orzo recipe is ready in 20 minutes (or less!) and brings together Italian flavors from the tomatoes and basil with East Asian flavors of fresh shimeji mushrooms, umami-packed Japanese miso, and heat from Korean chili paste or gochujang. What’s even better about this recipe is how easy it is to make, and you only need 1 pot to cook your orzo!

This Vegan Sundubu Jjigae (which literally translates to ‘soft tofu stew’) is one of my favourite Korean dishes. It has a light yet really rich and flavourful base with a kick of spice from gochugaru. This is so comforting and perfect for warm and hearty meals with a bowl of steamed short grain rice and some banchan (or side dishes) like kimchi and kongnamul.
