If you’re craving for some ramen, this easy Vegan Shoyu Ramen is sure to satisfy those cravings. Not only is it perfectly warm and hearty, but the clear broth is umami-packed from the kombu and mushrooms. This ramen is topped with some homemade “Char Siu” Mushrooms that I made using a mix of fresh shiitake and oyster mushrooms.

Kake Udon is my soul food. Something about its simplicity is perfect for those cold, rainy days. It’s also something I love to enjoy even in those hot summer days. It’s very simple to make and can be easily customised depending on any toppings you’d like to add. You can make kitsune udon by adding some inari aage (seasoned fried tofu pouch), wakame or rehydrated seaweed for wakame udon, tempura for tempura udon, and more!

Warm and hearty bowls of Vegan Wonton Noodle Soup filled with homemade vegan wontons in a simple yet tasty vegetable and mushroom-based broth with chewy wheat noodles.
These are inspired by my favourite wonton mein from local Cantonese restaurants growing up.
These bowls are served with some bok choy and finished with some fresh scallions and wansoy (or cilantro) along with a drizzle of chili oil for that extra heat.
