Sharing is caring!

A Filipino-Style Macaroni Salad perfect for sharing, whether it’s during family gatherings or potlucks. This is incredibly easy to make and packed with pineapples, raisins, carrot, onions, vegan ham, and vegan mayo.
WHAT IS FILIPINO STYLE MACARONI SALAD?
What makes Filipino-style macaroni salad distinct are the sweet notes from the juicy pineapple chunks and raisins. I think we Filipinos are known to like things sweet, as seen with this macaroni salad and also Filipino-Style spaghetti, with a sweet tomato sauce.

FILIPINO MACARONI SALAD INGREDIENTS
What you’ll need:
- macaroni
- carrot, peeled and finely diced
- red onion, finely diced
- vegan ham, diced
- vegan mayo, plus more if desired
- raisins
- pineapple tidbits or chunks in syrup , drained
- salt, to taste
- vegan cheddar cheess, optional
- freshly ground pepper
- sugar (optional, see notes)

HOW TO MAKE THIS MACARONI SALAD
- Cook the macaroni in salted water until chewy or al dente. Remove from the water and run through cold water to stop from cooking and too cool. Set aside and allow too cool.
- Prepare the rest of the ingredients. For the carrots, you can opt to boil these if you want cooked carrots but I kept mine raw and just finely diced them because I love the added crunch and bite.

MIX EVERYTHING AND ENJOY
- Add the cooked macaroni, ham, pineapple, raisons, carrot, onion, mayo, salt, vegan cheese (if using), pepper in a large bowl. Mix everything together and taste the salad. Feel free to adjust to your taste. If you want it sweeter, you can add some sugar. You can also add more mayo if you want it creamier.
- Place in an air tight container and then refrigerate. This is best enjoyed cold.
PREPARING IN ADVANCE
- This is also great to make in advance. You can prepare this a day ahead and leave it i note refrigerator until ready to serve.

Notes
Sugar and Mayo
Some really prefer a sweet macaroni salad and would add more sugar to the mayonnaise mix. If you want it sweet, feel free to add some sugar.
