This Miso Butter Mazemen is basically a Japanese no-broth ramen with a miso-butter base. Maze in Japanese means “to mix”.
WHAT IS MAZEMEN?
Also known as abura soba or maze soba, mazemen is a no-broth or soup-less ramen.
No-Broth or Soup-less Ramen
The names for this dish can vary depending on the region. There’s a very popular Japanese restaurant chain called Kokoro Mazesoba, that serves Tokyo-Style Mazesoba or mixed noodles.
It has all the components of a traditional ramen, such as the tare (seasoning), seasoned oil, and toppings, but without the soup/broth.
Like the name suggests with ‘maze’ meaning mix, you mix everything together! It’s saucy, packed with umami, and ready in 15 minutes or less.
Mixing the noodles in the sauce with the toppings coats these in all the flavours!
MISO BUTTER SAUCE BASE
This version is a miso butter flavour combo. You can opt to get creative with yours! For this sauce base, I used a mix of:
- sesame oil
- miso paste
- soy sauce, adjust to taste
- dark soy sauce optional (feel free to add more soy sauce)
- vegan butter
- hot water, this will help create a saucier consistency
- minced garlic
NOODLES
I used 2 servings of fresh ramen noodles or Chinese-style noodles. You might be confused with the name soba used in recipes such as Yaki Soba or Maze Soba that do not use soba or buckwheat noodles.
This is because the ramen noodles distinct for their yellow colour we know and love used to be called Chuka soba , which is why some noodles dishes such as Yaki soba still have ‘soba’ in their names even if these are made using ramen noodles.
To prepare your noodles: Depending on the type of noodles you’re using, you may need to boil these or just quickly blanch them, to cook until chewy.
TOPPINGS/TO FINISH
The toppings are totally up you you! Feel free to get creative and use what you have. I used the following:
- Tofu skin
- Chopped scallions
- Sesame seeds
- Sautéed mushrooms
- Corn kernels
- La Yu (Japanese chili oil)
Other suggestions for toppings:
- Bamboo shoots
- Nori sheets
- Extra firm tofu or baked tofu
PREPARING YOUR MAZEMEN OR NO-BROTH RAMEN
This is a very easy recipe! You can watch the full recipe video below. But you simply need to:
Mix all the base ingredients into a large bowl. Separate into 2 bowls if serving for 2 people. Also, it’s best to prepare the sauce and mix it all up so it’s ready before you cook the noodles!
Cook or prepare your ramen noodles or other wheat noodles of choice until still very chewy and al dente.
Drain the noodles from the water then immediately add into the sauce mix while the noodles are hot. Mix everything together!
Top with toppings of choice and finish with La-yu or Japanese chili oil.

Miso Butter Mazemen (Japanese No-Broth Miso Butter Ramen Noodles)
Ingredients
Sauce Base
- 1 1/2 tbsp sesame oil
- 1 tbsp miso paste
- 1/2 tbsp soy sauce or more to taste
- 2 tsp dark soy sauce optional (feel free to add more soy sauce)
- 1 tbsp vegan butter
- 1-2 tbsp hot water , this will help create a saucier consistency
- 2 cloves garlic minced
Noodles
- 360 g cooked fresh ramen noodles , 2 servings (see notes for subs)
Toppings/To Finish
- Tofu skin
- Chopped scallions
- Sesame seeds
- Sautéed shiitake mushrooms
- Corn kernels
- La Yu Japanese chili oil or other chili oil/sauce of choice
Other topping suggestions
- Bamboo shoots
- Nori sheets
- Extra firm tofu or baked tofu
- Togarashi Japanese 7-spice blend
Instructions
- Sauce base: Mix all the base ingredients into a large bowl. You can easily adjust the sauce to your desired taste, of course.If you want to easily melt the butter, you can quickly microwave the sauce. Chunks of butter are okay though because once you add the cooked noodles, it'll melt from the heat.Separate into 2 bowls if serving for 2 people. Also, it’s best to prepare the sauce and mix it all up BEFORE you cook the noodles.
- Prepare Noodles: Cook or prepare your ramen noodles or other wheat noodles of choice until still very chewy and al dente. Drain the noodles from the water then immediately add into the sauce mix while the noodles are hot.Mix everything together! Taste the noodles and feel free to season more to taste, if needed.
- Serve and enjoy: Top with toppings of choice and finish with La-yu or Japanese chili oil then mix everything again to enjoy! Slurp away! ❤️Note: I prefer to eat this hot but you can opt to have it cold, if you'd like.

Notes
Noodles
- If you don’t have access to fresh ramen noodles, feel free to use dried wheat or ramen noodles and just cooked these until chewy.
- You can also use other wheat noodles of choice, such as instant ramen bricks and even thicker wheat noodles.
- Gluten-free options: You can use instant rice ramen.

Very tasty a quick to put together. I heated the sauce ingredients in the microwave to melt the butter and to make the cold miso combine easier with the other sauce ingredients. Loved it!
