5 Easy & Tasty Fried Rice Recipes for Busy Days

Fried rice is a go-to quick meal I love to prepare. Not only is it super easy, but it’s a great way to pack in any leftover protein, vegetables, and of course to use leftover rice! With the holidays coming up and days becoming a lot busier (at least for me!), there are days when I opt for quick meals such as fried rice. These 5 easy vegan fried rice recipes are a few of my favourites in terms of flavour, but like most (if not all) of my recipes, these are easily customisable to your taste and adjusted depending on what you have on hand.

MY FRIED RICE ESSENTIALS

  • Leftover rice: leftover rice has less moisture than freshly cooked rice. This way the rice grains separate better and don’t clump together and don’t become mushy when cooked down
  • Soy sauce: I can make the simplest form of fried rice with just soy sauce as seasoning. I also love dark soy sauce to give the grains that almost caramel-like colour
  • Any leftover vegetables or protein of choice: ANY vegetables work. Really. But for those really busy days, when I’ve no time to chops or prep vegetables, a frozen mix of corn, carrots, and peas really save the day. I also love using extra firm tofu for my fried rice!

FRIED RICE NOTES/TIPS

If you’re using freshly cooked rice, I recommend to place the rice on a large plate and really lay out the rice as thinly as possible to create a large surface area and to allow it to cool in front of a fan for 10 minutes for the moisture to evaporate. 

Break apart your leftover rice: Place the rice in a large bowl and carefully break apart with a spoon to separate the grains.

You don’t necessarily need a wok to make good fried rice. I love to use a non-stick pan or skillet for easier cleaning and to be able to use less oil too.
